an easy alternative to boxed cereal

I know that many are just starting to see a glimmer of spring on the horizon, but for us we’ve already hit the 90s several times.  So when I learned that today’s high was only going to be in the mid 70s, I immediately began to think about turning the oven on.  I knew the kids would want breakfast soon, so I put off the urge to start with cookies (although I have been known to give them cookies for breakfast) and began to gather my ingredients for granola, vanilla granola to be exact. 

6 cups old fashioned oats

1 cup sliced almonds

1/2 cup flaked coconut

1/2 cup sesame seeds (or any other seed, golden flax would be good)

2/3 cup coconut oil

1/2 cup brown sugar

1/2 cup honey

2 Tbsp water

1 1/2 tsp vanilla extract

In a large bowl, mix together the oats, nuts, coconut, and seeds.

Combine the remaining ingredients in a saucepan over medium heat and stir until the sugar is completely dissolved, just don’t let it boil (although if you happen to turn away for a second and come back and it’s totally boiling, don’t fret, it will be just fine — I found that out this morning).

Pour over your dry mixture and stir until everything is evenly coated.  Spread out onto two greased baking sheets.

Bake at 250 degrees for 40 minutes, switching racks and stirring around at 20 minutes.  Do another stir when you take it out of the oven and let it cool.  Store in an airtight contained.  A quick and very satisfying breakfast or snack.
