an even more wonderful sunflower seed butter recipe

Holy cow, I thought the granola balls we made were good, but I promise you, these fudge bites shared over at Nourishing Bites are downright scrumptious.  I kid you not.  They take all of maybe 5 or 10 minutes to prepare (plus 30 minutes of utter anticipation while they harden up in the fridge) and they’re done, and you totally feel Martha Stewarty.  Let’s start.

1/2 cup coconut oil

1/2 cup seed or nut butter of your choice

1/2 cup cocoa powder

1/3 cup honey

1/2 tsp vanilla

Mix everything together.  I used an immersion blender because if use it for just about everything or you can simple wisk the ingredients together by hand.

Pour them into molds.  I happen to have these from IKEA, but you could use anything — mini muffin tins, dixie cups.

Stick them in the fridge for a half an hour and you’re all set to wow your family and friends.

A little bonus today that has absolutely nothing to do with sunflower seed butter, I just think it’s funny.

We get flood irrigation every two weeks.  All the animals have a raised area where they go to escape the water flow.  Even the chickens have figured it out, but not the goats.  Every time we get irrigation, they trap themselves on this little tiny piece of concrete next to our wall and there they stand for I don’t know how long.  Silly goats.  It was much funnier in my head than when I actually typed it out.  Oh well.
